because of DIFFUSION,

In a perfume bottle the molecules of perfume are in higher concentration,that is they are present in more quantity in a relatively small area or space ,they are under pressure,so when u open the perfume bottle a phenomena occurs which is known as diffusion which makes the concentration of the perfume which has come come out of the bottle to equally spread in all directions so as to make the pressure to decrease.that is why it's fragrance spreads all around in no time
