When fresh vegetables cut into pieces, they are changing their color because of tyrosine.

• Tyrosine is an enzyme present in the cells when these are exposed to air reacts with oxygen then turn its color into black or brown. This is called an oxidation reaction.

• For example, Apples, Potatoes, Raw Bananas when cutting into the pieces, oxidation reaction takes place in the layer of cells this causes fruits to turn a brown color.
