Poly phenol

Explanation:

  • When vegetables and fruits are peeled an enzyme called poly phenol is exposed.
  • It is found in the cells of the vegetables and fruits.  It reacts with the oxygen and gets oxidised.
  • Oxidation of poly phenol turns them brown.
  • Bruising seen on various fruits is also caused by this reaction.
  • When vegetables and fruits are damaged by being hit, the cells in that area also gets damaged and the enzymes come in contact with air and turn brown.
  • Anti-browning solution can be used to prevent them from turning brown.
  • Browning of the surface is also seen when you cut Brinjal, Potato or Artichoke.
