The colour change observed when vegetables are cut into pieces is usually browning or darkening of the cut vegetables.

1) When vegetables are cut, the cells are severed which makes them release enzymes as well as makes them get exposed to air.

2) On getting exposed to air, oxidation of the vegetables occur which as a result results in the darkening of the flesh of the cut vegetables. This is known as enzymic browning which is an oxidation reaction.

3) Some more examples of enzymic browning include -

i) developing colour and flavour in coffee, cocoa beans and tea.

ii) developing color and flavour in dried fruits such as figs and raisins.
