oil and fat containing food items are flushed with nitrogen why???

because to avoid the food items to get rancid. .....that is there is change in their taste if they come in contact with oxygen present in the atmosphere. ....here nitrogen acts as antioxidant .......chips too contain nitrogen so they they remain fresh for couple of months. ....tq

Here is your answer:

Oil and fat containing food items are flushed with nitrogen gas to prevent the food from getting oxidised as nitrogen cuts the supply of oxygen. These substances when coming in contact with oxygen, becomes rancid which  results in change of their smell and taste.

Ways to prevent them from getting oxidised :-

1. Usually substances which prevent oxidation(antioxidants) are added to foods containing fats and oil.

2. To prevent the food from getting oxidised, it is generally stored in air tight containers which prevent them in coming in contact with oxygen.
