=>>   When oil and fat containing items come in contact of air they react with moisture and their smell and taste changes and becomes rancid.This is called rancidity..In order to prevent this food items containing fats and oils are flushed with nitrogen. Nitrogen being a inert gas prevents foods from oxidising.
