Because nitrogen gas help in prevent oil containing food from "RANCIDITY"..

Food items that are fried contain oil and when kept in open, react with moisture present in air and turn rancid. Hence, to prevent this rancidity of the food items, they are flushed with a gas less reactive than air, like nitrogen, so that they stay fresh for a longer period of time.
