Oil and fat hold items which are get flushed with support of the nitrogen to save them from the major rancidity and also it need not result in a bad smell as all as taste.
Even the nitrogen to prevent it from geetign contact with air which is due after something and also food start producing foul smell ranic .

In the presence of oxygen in the air the fats present in the fatty food are oxidised to compounds which have bad smell that is the food become rancid flushing with nitrogen cuts off the contact of food with oxygen and protect the food from.rancidity
