OIL AND FAT CONTAINING FOODS ARE FLUSHED WITH NITROGEN BECAUSE THE FAT AND YHE OIL IN THE FOOD MY GET OXIDISED AND GIVE A BAD TASTE AND TEXTURE AS THERE IS OXYGEN PRESENT IN THE ATMOSPHERE......
SO IF ITS FLUSHED WITH NITROGEN THEN OXYGEN CANNOT MAKE CONTACT WITH THE FOOD........AND THUS CANNOT GET OXIDISED.....
