to prevent them from rancidity , they keep food containing oil and fats , nitrogen is an antioxidant too so...

Oil and fat containing food items flushed with nitrogen because nitrogen acts as an antioxidant


3051: To prevent the food from getting bad. When oil and fat containing food is kept out they get oxidised and become unfit to eat. To prevent them from getting bad oxidation is done. Here nitrogen is used as an antioxidant.
