the following reaction occurs because brass reacts with the curd that is the lactic acid and that is why the taste becomes bitter

Curd is form when lactobacillus bacteria reproduce. if the curd is not transferred to cool place then curds turns sour because the bacteria continue to multiply and produce more latic acid
