It is based on the principle that aliquid when heated under pressure starts boiling at a higher temperature. so the waterboils at temperature more than 100 degree celsius. therefore it can cook the food quickly.

As the pressure rises the temperature of the water stream inside the cooker rises above the normal 100 degree celsius boiling point temperature
