Crystallization is based on the principles of solubility: compounds (solutes) tend to be more soluble in hot liquids (solvents) than they are in cold liquids. If a saturated hot solution is allowed to cool, the solute is no longer soluble in the solvent and forms crystals of pure compound.

Answer:

The principle behind the crystallisation is that the amount of solute that can be dissolved by a solvent increases with temperature and the fact that the solubility decreases with temperature. This causes the precipitation of the solute.

If the cooling is slow enough, the solvent forms crystals (some hydrated) on any surface like the inside of the beaker.
