Once his crop was ready, a farmer spent a lot of time spreading the grains in the sun to dry it.why did he not immediately store the grains instead?

when he stores grains which are still having water which makes it good medium for fungal growth,this destroys the grains,but when it is dried and water content evoporated fungi can't grow so they dry the grains
