Explanation:

think it's Callisto.

"Once served the Moon, struck by lightning"

Callisto used to serve Goddess Artemis but Zeus was attracted to her

"A woman of pride, turned frightening"

Goddess Artemis held her in high regards, but once she became pregnant, she became afraid that her condition will be revealed to her Goddess and she will be punished for breaking her vow of chastity

"A monster she became and roamed the woods"

After her condition was revealed to Goddess Artemis, Goddess Artemis was furious and morphed her into a bear

"Till she met her end, by her own cub"

As a bear she was slain by her child with Zeus, Arcas

"She met her Queen, one last time"

Goddess Artemis found her dying or dead

"And was turned into a prized collection for life."

Either Goddess Artemis or Great Zeus finally turned her into a constellation, Ursa Major "the Great Bear".

I could be wrong, but Callisto seems the most promising answer.
