The meaning of this dialogue, can only ever be truly explained by Snape (or J.K. Rowling) but as a potterhead, I think this line means his never ending devotion and love for Lily Potter. Some people call it an obsession but there is a clear difference between never-ending love and obsession.
Snape is one of the most misunderstood characters of all time but even when he knew that helping Lily Potter would most likely get him killed, he did it. This shows his love for her. He could've just as easily kidnapped Harry, gave him to Voldemort but this would break Lily. He knew it. He didn't care about the fact that he might die but Lily's happiness was important.
Okay... I'm going kind of off-topic here, but yes the answer, the deep meaning behind "Always" is that Snape has always cared and loved Lily and he would never stop.
