After chewing for long time the food turns into glucose as salivary amylase works on it. Hence it's taste is sweet

The saliva contains an enzyme called salivary amylase that breaks down starch which is a complex molecule to give sugar. Through this enzyme when we chew chapatti for a long time it's taste become sweet.
