Optical activity of tartaric acid

tartaric acid is present in baking powder. When baking powder is added to water for the preparation of cakes, then this tartaric acid reacts with Na2CO3 to form CO2 . It neutralizes the Na hydrogencarbonate and prevents the unpleasant taste of cake.
The CO2 formed is escaped out of cakes forming holes, which makes the cake look bigger , soft and spongy.
