Pepsin:

  • Pepsin acts on the milk protein (casein) and converts it into paracasein and initiates its digestion in the stomach.
  • Rennin promotes this process and hydrolyses the casein into paracasein.
  • It is also present in small amount in human infants but not in adults.
  • Pepsin acts on water soluble caseinogen (milk protein) to form soluble casein.
  • This combines with calcium salts to form insoluble calcium.
  • Digests protein into amino acids is known as trypsin and it is a pancreatic enzyme.
