They are filled with nitrogen to avoid the food from getting rancid [oxidising of  oil].Due to this reason the food never gets rancid and doesn't produce bad smell/odour

And the main reason is nitrogen is very reactive gas as compared to oxygen. oil and fats gets oxidised and become rancid in the presence of air[oxygen].But this reaction is prevented in the presence of nitrogen.
