Assured sedd sets are possible only in plants undergoing self pollination as pea plants are self pollinated hence they produce assured seed set even in absence of pollinators.

Pea flowers produce assured seed sets because they mostly undergo self-pollination and do not require any external pollinating agents. The pea plant was used by Mendel for his experiments on genetics because the pea plant mostly undergoes self-pollination and thereby, in the absence of any external pollinators also it attains 100% pollination.

Since, it mostly fertilizes within itself, so, there is no possibilities of reduction in the seed sets and also the pollination occurs even before the flower opens up after maturity.
