.Coconut and coconut oil is predominantly used in cuisines of Mangalore,Udupi and Kerala, as these coastal southern regions has plenteous coconut trees. Where as authentic Tamilnadu and Andhra cuisines utilize sesame oil,groundnut oil.People have now switched to sunflower and rice bran oil for cooking purposes. Hence coconut oil is considered indispensable in only few South Indian dishes to enhance flavour.
