Explanation:

Although potatoes are not a grain, they are a starchy food that has been viciously attacked in popular media. Let’s start there.

Potatoes

Potatoes are known to be loaded with fiber, phytonutrients, vitamins and minerals. As a matter of fact, they are an excellent source of potassium-a heart healthy mineral; yet they come under fire as making people fat. New research by the American Chemical Society has found that eating two servings of potatoes a day can reduce your diastolic blood pressure (the bottom number) by 4.3% and the systolic (top number) by 3.5%1. The kicker? Eating two servings a day did not cause weight gain. Why you ask? It is the preparation method. The potatoes were cooked in the microwave without fat and eaten dry (no butter or sour cream). American’s favorite potato is the fried potato. Maybe the problem is not potatoes, but the way we choose to eat them.

Rice

In its natural state, rice can be any combination of colors from white to black and everything in between. That means that whole grain rice can be white, brown, black, red, orange, yellow, or any other color. The color is not how you determine if it is whole or not. Just like any other grain, rice has bran, germ and endosperm. If those have been removed, it will digest too quickly. The question then becomes, if the color doesn’t give you a clue as to whether it is whole grain or not, what does? For one thing, if the name of the rice is “white rice,” it is the highly processed type. The other way you can tell is by looking at the bag. Buy rice that says “whole grain” on the bag.

In 2008, researchers discovered that during weight loss efforts, those that ate whole grain rice, specifically a combination of brown and black, lost significantly more weight and reduced their cholesterol more than those who ate white rice. The only difference in this controlled study was the types of rice eaten. All other intake and movement was completely controlled.
