Plasmolysis is the phenomenon in which the protoplast of the cell shrinks.
This happens when the cell undergoes exosmosis i.e. it loses excess of water .
A cell undergoes exosmosis when it is placed/surrounded by a hypertonic medium (hyper= excess ; tonicity= solute content). The hypertonicity of the surrounding promotes exosmosis (osmosis where water exits cell) water from inside of the cell to come out .
And thus leading to shrinkage of its contents.
