If you are talking about the ionizing radiation (X/gamma photon) ,the basic phenomena which takes place when X or gamma ray photon interacts with matter are photo-electric effect, Compton scattering, and pair production. The probability of these phenomenon depends on the energy of incident photon and the effective mass number of the material. For details please refer the book of knoll -"Radiation detection and measurement" -chapter name "Interaction of radiation with materials"
