pickle do not get spoil but sambar get spoil why

Pickles contain high concentration of salts and lot of oil and no or very low watet containt. Therefor these conditions does't allow growth of microorganisms but in samber situation is reverse, specially water containt is large, which is favorable for growth of microorganisms.
