pickles do not spoil but sambar gets spoils?why?

Well the pickle will not get spoiled because it contains the salt and red chill powder a lot this a type of technique where the food it stored for long time so that it would not spoil or get attacked by the microorganism and get spoiled. But when we see the sambar we know that the sambar would get spoiled because there is no content in the sambar which can stop the growth of microorganisms in it. Therefore pickles don't spoil and sambar would spoil easily.
