The white matter slowly slowly starts to mix with water and if the temperature is more then it happens faster...
if the salt content in water is more the egg will shrink as the egg will lose water through the semi permeable membrane....

A de- shelled egg is surrounded by a semi-permeable membrane.When it is placed in a concentrated salt solution for 5 mins, water will flow from the cell to the solution that is exo-osmosis will take place causing the egg to shrink.
