Plants absorb minerals and nutrients from the soil in liquid from osmosis so they have how to absorb much water even to take up small quantities of these nutrient.

The excess of water is of no use for the plants so it gets rid of it through tanspiration, also evaporation of this excess water from the leaves has cooling effect on the plants and protects it's from scorching in summer that is why summer there is relatively more transportation than in winter.
