Jams and jellies are not spoiled even when they are stored at room temperature because of the high concentration of sugar in them.


The high concentration of sugar inhibits the growth of microbes in it as it creates an environment of low water activity, i.e. it is a hypertonic solution for the microbes and so they are unable to grow there.
