Remember this formula

Change in velocity is given by 2Vsin(theta/2)

here 2VSin60/2

2VSin30

2V ×1/2

V

So Change in velocity is V

Now we know that Speed is nothing but magnitude of Velocity

And if You see in diagram New Velocity is 2V , and I have given two ways to calculate change in Velocity. One in pic and one is above short formula. For speed purpose I drew that diagram, See there New Velocity is 2V, earlier we had V...so change is 2V-V= V

Now Speed is same , as only direction of velocity is changed , but it's magnitude is same

So change in speed is zero and change in velocity is V
