a) Fresh milk is slightly acidic naturally. Fresh milk is made slightly alkaline by adding a little of baking soda so that it may not get sour easily due to formation of lactic acid in it

b). the slightly alkaline milk takes a longer time to set into curd because the lactic acid being formed during curdling has to first neutralise the alkali present in it
