Since i grew up near Siliguri, West Bengal , have visited Dhubri Sahib.

While reading about my own family and ancestry history, i.e. Ramgharia(specifically Tarkhan/Carpenters) i came across the following,

The British authorities also encouraged Ramgarhias to migrate within India during the first quarter of the 20th century. Their inventiveness and skills at construction, repair and maintenance were of much use at, for example, the tea plantations in Assam. Now distant from their landlords in Punjab, who were mostly Jat Sikhs, the Ramgarhia diaspora in the Brahmaputra Valley of Assam were able to enhance their previously low social status.The lessons learned in Punjab, where they had established a few gurdwaras to aid community cohesion and had been loyal to the British and generally unwilling to support the Jat-led Akali movement, assisted their improved status in Assam.

This fits in well with my family history, though somehow we settled in the Siliguri Corridor but i remember older generations talking about work and businesses deeper in the north east, while my Dad also worked for many years in a tea plantation construction business in Silchar,Assam and also a project in early 90's by my Grandfather where we used to visit him.

Our historical business was Tea leaf Rollers workshop both manufacturing and repair,Construction PWD and Private, Busses/Trucking and Civil Engineering. These kept changing with times and there were ups and downs.

The old generation in our family still calls the whole North East region as Assam, which is interesting.

Now the Differences:

Language: Even though both Punjabi and Assamese are Indo Aryan languages they are so for apart geographically that there is no mutual intelligibility. Neither can a person from one language read the other language. And even though the script of Assamese and Bengali is similar except for couple characters, in spoken form i can't understand that much even though i can understand Bengali.

Food: Assam's staple food is Rice. Fish is also very famous. And Tea is widely grown and distributed across the globe. The terrain of Assam is hilly compared to Punjab.Punjab on the other hand grows all types of crops due to fertile land, but it's diet is wheat oriented.And Punjab's food is less non-veg than Assam.
