for the morning assembly, the first thing to be that is the Holy Quran recitation, the school prayer and the national anthem / flag hoisting. for adding some details to it you can perform some activities like a thought for the day, a speech on any useful topic , the one in your class who is the best singer can sing a song , quizzes .
