it is mainly due to the type of bonding in these molecules

electrolytes form ionic bonds by donating and receiving electrons , thus when dissolved in water the bond btw them will be hydrolysed and they are converted into ions

however for non electrolytes , they mainly for covalent bonds which are formed by sharing of electrons and are more stronger than ionic bonds hence they will remain almost intact when dissolved in water
