Mercury is used in thermometers as it has high coefficient of expansion so it can detect even the smallest change in temperature. it does not stick to the walls of a thermometer and is the only metal in liquid state at room temperature. water cannot be used in a thermometer as it cannot be seen through the thermometer wall and may freeze at temperatures below 0degrees
