The conversion of vegetable oil to vegetable ghee is called hydrogenation reaction.

During hydrogenation, vegetable oils are reacted with hydrogen gas at about 60°C. A nickel catalyst is used to speed up the reaction. The double bonds are converted to single bonds in the reaction. In this way, unsaturated fats can be made into saturated fats i.e. oil is converted into fats.

this is an example of addition reaction which is also called hydrogenation as hydrogen is added in the reaction
vegetable oil(unsaturated compound) + hydrogen ,_____in the presence of nickel forms vegetable ghee(saturated compound)

means that if any unsaturated compound is added with hydrogen in the presence of nickel forms saturated compound
