The "transition" is how the slide moves to the next slide, not the slide itself.  Text has to be on something solid, a slide.  You can apply movement to text but you can't put text on non-solid somethings like the x, y, and z axes that determine the movements of transitions.

Well, now let me eat my words;-)  Yes, you can animate graphics and text ...but it has nothing to do with transitions (I'm rescuing my pride;-).  

1. Type your text on a slide.  (If you want to add text effects, select a "fat" font - or you can use Word Art.)

2. Click the animation tab.

3. On the right side in the "Animations" section, where the box says "No Animations", click the drop down and select "Custom Animation".  In the new dialog that opens on the right side of the workspace, click the dropdown on "Add Effect".  The text has to be highlighted for Add Effect to be active.

4. Be sure to add the effects in the correct sequence: Entrance, Emphasis and/or Motion, Exit.  If you want to change the order of an effect, click on it then use the Reorder buttons below the pane to move it.  Click "Play" to see your effects in action.

5. Now, for some real fun. Each effect you've chosen will appear in the pane of the Custom Animation dialog.  Click on one and a dropdown arrow will appear.  Click on this for "Effects Options".  Example: I had my text spin.  In the options I made each letter spin in sequence and had each letter rather than the whole text break apart at the end.
