Answer of the first question :-

When a dry apricot is placed in a salt solution the cocentration of salt is more in the solution than that in the dry apricot so there is no movement of water in the apricot , hence it doesn't swells up.

Now when it is kept in water the salt concentration of apricot is more than that of water hence movement of the water takes place into the the apricot.

Second Question's Answer :-

Now in a cell there are two proccesses which are responsible for the transport of fluids .

Now for the atmospheric gases like carbon dioxide , Oxygen the diffusion is the process responsible for it.

Diffusion :- The movement of the fluid from higher concentration to the lower concentration.

For water there is a similar process named as Osmosis responsible for it.

Osmosis :- The movement of water molecules from higher concentration to the lower concentration through a semipermeable membrane.
