2.No. It cannot be prevented by storing food away from light. Rancidity is caused due to the oxidation of oils present in food.

3. They store the food in air tight packaging to avoid any reaction of the oils in the food with oxygen.

Some of them flush the package containing food with nitrogen or other such elements as it acts as an anti oxidant and prevents food from getting oxidised.
