It says that shape of solid is defined means if we put a stone in a cubical container then stone will not change its shape because its shape is defined , in your question you can take sugar salt crystal instead of stone .

In next statement it says that sponge has pores which means holes (I.e. it have some empty space inside it ), so air is trapped in these holes due to which if we copmress it , the air will go out of holes cause of force applied by us, hence we can compress it .
