This is because we don't possess the digestive system that ruminants have. Their digestive system is longer and contains certain enzymes for digesting the cellulose present in grass.

grass contains cellulose.

cellulase is the enzyme which digest cellulose.

humans don't have the cellulase enzyme.

so we cannot digest grass
