Hey both the processes r simply due to osmosis.As u know about osmosis in the first case conc. of solvent(water) is more outside the potato so water will move form its higher conc. to lower conc. inside the potato making it swelled up n firm. The opposite will happen in the next case.Hope this helps u!!
