Due to the action of HCl in stomach, ( which destroys the bacteria and activates pepsin) the food becomes acidic which is known as chyme. In small intestine, the enzymes work at a higher pH( alkaline/ basic condition) thus it has to be made acidic to basic for pancreatic enzymes to act.
