when salt is added to the vegetables,then the concentration increases(the solution becomes hypertonic).thus,the vegetables releases water(exosmosis).

if you add salt on outside the vegetables then its outer concentration must be high . and osmosis takes place from high to low concentration . then the material should move to outer surface to inner of vegetables . But , it is moving from vegetables to outer . why ?
the concentration of solute increases but concentration of solvent deceases
and osmosis takes place from region of higher to Lower concentration of solvent
