Because Volume starts with 'V' so it is more easy to understand.

Because we need to know the amount of water in the pipes and pool
for this we can use formulas as pipe is cylinder we can use pi r square h and for pool we can use lbh ....so why they have taken like V/x or V/x-5 etc.

See , we have to find water flowed in the pool per min so we have to divide total volume by total time , time in these cases is supposed as x
