Mountains are very symbolic places of theophanies (revelations of God). This is certainly true in the Bible where pagans & Samaritans & Jews go to 'high places'. Reading about Moses & the Israelites will give you an important theophany that is hugely important to both Jews & Christians. Elijah also had a theophany on Mount Carmel. In the New Testament there are lots of references to mountains including Jesus' transfiguration. There will be things for other faiths but I'm going from my Christian knowledge. Try looking up those things & they may get you started. I do know that Carmelites (they are a Christian religious order) have a lot about mountains. Its used figuratively & 'mystically'. If you want to go down that route you could try a search on Carmelite spirituality.
