Because it was the basis for Roman civilization which in turn has shaped the socio-cultural map of Europe for, well, as long as they have been gone, to be fair. Greece is credited with the creation of democracy, extensive works on philosophy, art (which Rome chose to copy) and was essentially the "first successful Western civilization".

However, Greece in reality was much less illustrious than it appears to be from a historical standpoint. Not that I want to play down the achievements of my own ancestors, but the majority of mathematics, general knowledge and initial art that Greece used were adopted from much more ancient and advanced civilizations of the time. Greek scholars would pride themselves in visiting places like Babylon or Egypt because they were widely accepted as superior cradles of knowledge and higher education than Greece.

All in all, you can still praise Greece, but by the same logic we should also pay dues to ancient Mesopotamia and Egypt.

* Because Greece has the most ancient history and culture of Europe and none of the countries were in favour of losing it's culture and history.

* Due to the invasion of muslim power, Greece was in danger of losing it's diverse cultures.

*So European powers forcefully wanted the Muslims to leave the area as it was their pride and pleasure.

* Greece was always being protected by European countries

* After all these incidents the treaty of Constantinople recognised Greece as an independent nation
