There is a protein called casein which helps in the coagulation of milk and turning it into curd. But, the casein only performs this function in an acidic environment. Adding lemon juice creates an acidic environment for the casein to coagulate and thus giving curd.
Pooja could have also added the bacteria lactobacillus, which would have taken up the lactose in the milk and would have produced an acidic environment for casein.
