Potassium sulphite is used as a preservative because it protects the food from going stale by stopping the growth of bacteria, mold and yeast. This happens because potassium sulphite reacts with water to produce sulphurous acid which lowers down the pH of the solution which does not permit the growth of these. It further helps to prevent the food discoloration which is especially useful when it comes to food items like squash.
